Organoleptic Examination

On the eyes: Cherry red intensity with medium color, and orange hues that indicate maturity. Clean, clear, bright and well executed. High density that notes alcohols levels.
On the nose: Expressive and intriguing aromas that showcase fruits, wood and spices. The fruit notes are composed by cassis, plum and currant. The spice touches are highlighted with pepper and some clove. The wood rounds out the aroma giving it finesse and elegance.
On the mouth: Full body, dry taste, long finish with detailed tannins, and light acidity. Aftertaste notes fruit and spices, and a light touch of green pimento. An intense and expressive palate.
Pairing: We recommend to pair with flavor intense dishes like, quality beef cuts, spiced or smoked dishes, such as duck lasagna, cured hams and strong cheeses. With Mexican cuisine, rabbit mixiotes.
