VINIFICATION: Pre-fermentation maceration, fermentation in stainless steel with temperature control with select yeast with subsequent aging in french barrels, 1/3 new barrels for 24 months, and 18 months in bottle.

SERVICE TEMPERATURE: 18 a 20 degrees celsius

STORAGE TIME: Production limited to 2,300 bottles

Organoleptic Examination

On the eyes: In this wine we can see a violet, redish color of good intensity with ruby ​​nuances that denote good maturity. Long, thick legs that show good density and generosity of alcohol. The wine is clean, crisp and bright that show us a healthy wine, well achieved and of quality.

 

On the nose: In this wine we can find attractive fruity notes of ripe plum, blueberries, subtle notes of the toasted barrel and tobacco. It is an elegant and sophisticated aroma.

 

On the mouth: The palate is powerful and fleshy, we can perceive a pleasant acidity with elegance and complexity. Tannins are silky and well balanced.

General Evaluation

This is a seductive wine from start to finish, very complex and elegant for sophisticated palates.

 

Pairing
It is recommended with powerful proteins like lamb, venison, pork or veal based dishes. Our recommendation with Mexican gastronomy is ‘cuete mechado en salsa de ciruelas’.
